One of my favorite quick and easy meals to create is a nice healthful dish in one bowl. Tonight I made a quick batch of coleslaw to accompany the prepared rack of ribs that I had purchased for dinner at the Cotuit Grocery store aka: The Coop. Ribs were warming in the oven for my husband and daughter and I was off to yoga class. Came home and the ribs were gone, however, there was plenty of coleslaw. So I took out the brown rice and chick peas that I had cooked a few nights ago, placed it in a pasta bowl and warmed it up. Next I sprinkled a little bit of
tamari and rice vinegar on the rice and topped it with a healthy portion of my coleslaw. Sprinkle with
gomasio. Delicious, nutritious and easy!
Cole slaw:
- 1/2 head cabbage, chopped
- 1-2 carrots, diced
- 1 apple, diced
- handful of dried cranberries
- 2 tbls olive oil
- 1 tsp red wine vinegar
- 1 tsp rice vinegar
- 1 tbls Mirin
- salt & pepper to taste
Mix it all up, taste, and adjust with more vinegar or salt and pepper, if needed.
Brown rice and chick peas:
2 cups brown rice
1 cup raw chick peas
5 cups of water
1 tsp of salt
Place all ingredients in a pressure cooker. (I like the
Aeternum) Bring the pressure cooker up just until the steam starts coming out of the valve and turn heat down as low as possible. Cook for 50 minutes. This is the most nutritious way to prepare brown rice, and the addition of the chicks peas is a great base for some very quick and easy meals.
